Hand forged  by 5th generation blacksmith Yasuhide Maeda. These knives are named after the Japanese black [Kuro] heron [Sagi].

These are rustic knives with a nashiiji (pear skin), kurouchi finish which helps with the food release. 

Aogami Super (Hitachi Metals Ltd.) is one of the greatest Japanese Carbon Steels. In addition to containing more Carbon, Chromium and Tungsten than Blue Steel No.1, it also includes Molybdenum. It has very good edge sharpness and excellent edge retention, but is also capable of attaining high hardness without being brittle. Consequently, many knife enthusiasts rate Aogami Super as one of the very best High Carbon Steels in the world.

Kingwood is named from several French kings (Louis XIV and Louis XV) in the 17th and 18th centuries that preferred the wood in the use of fine furniture. Kingwood is considered a true rosewood in the Dalbergia genus, and is among the densest of all rosewoods.

Use & Care

  • Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break with improper use.
  • Hand wash with warm water and towel dry. Never put the knife in a dishwasher, nor soak it in water. Ever!
  • Use a sharpening stone to maintain the sharpness of the blade. 
  • Do not use on hard melons or items that may torque the blade
