 Tadokoro Nakagawa Hon Kasumi Ginsan 3 Gyuto 240mm — Blade Only


This 240mm gyuto brings together the work of two Japanese craftspeople: Satoshi Nakagawa forges the blade in Sakai, and Makoto Tadokoro hand-grinds and finishes it in Tosa.


Tadokoro began training as a teenager under Sakai grinder and sharpener Morihiro. His decades of experience are reflected in the careful grinding and finishing of this series. Nakagawa is known for his work with Ginsan (Ginsanko) stainless steel and for the attention he gives to forging and heat treatment.


In our experience using and sharpening Nakagawa’s Ginsan blades, they form an excellent edge and offer a compelling balance of edge retention and toughness.

Use & Care
