Saji-san has made this line of knives from the advanced powdered metallurgical steel known as R-2 or SG-2. This is an amazing steel for kitchen knives as it can be heat treated to a very high rating. The result is a blade that is easy to use and to sharpen. It holds a sharp edge and is very durable. The inner core of R-2 is then covered in a multi-layer damascus cladding made from a soft stainless steel. These are really easy knives to maintain.

Use & Care
- Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break with improper use.
- Hand wash with warm water and towel dry. Never put the knife in a dishwasher, nor soak it in water. Ever!
- Use a sharpening stone to maintain the sharpness of the blade.
- Do not use on hard melons or items that may torque the blade.
