Custom Fujiwara Teruyasu- 240 Nashiji gyuto with Amboyna Burl

Sold out

Custom Fujiwara Teruyasu- 240 Nashiji. The Fujiwara family started as blade forgers over 130 years ago. After WWII, the production of swords was severely limited and the family turned to knives and scissors for production industries. Teruyasu Fujiwara IV turned to making kitchen knives as a way to regain some of the family’s previous glory. The knives Fujiwara-san makes are the real darlings of knifewear, in part because he forges the complete knife from start to finish. Many blacksmiths make a blade with a carbon steel core and laminate it with stainless steel for lower maintenance; this guy invented that process.

  • The kanji on the knife blade藤原照康作reads “Fujiwara Teruyasu Saku” (Made by Teruyasu Fujiwara).
  • Steel Type #1 Shirogami (White Carbon) with Stainless steel cladding
  • Rockwell Hardness 61:63
  • Handle Amboyna burl Blacksmith Teruyasu Fujiwara

Use & Care

  • Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break.
  • Hand wash with warm water and towel dry. Never, ever put this in a dishwasher. Ever!
  • Use a sharpening stone to maintain the sharpness of the blade.
