With my second collaboration with Fujiwara Teruyasu, my dream knife has become reality. This batch was hand forged with in-house laminated iron clad aogami super. The steel has been treated in all aspects as the Denka. In fact, it started out as an ironclad Denka. 

While I am enamored by the work of Fujiwara San, I wanted to have a refined finish. For that, I enlisted the help of the talented sharpener Myojin Naohito. I gave Myojin San free reign, with one request - “Please respect the intentions of the master”. 

The result is mind blowing, I could not imagine such a beautiful knife. I hope you enjoy this knife as much as I have enjoyed the process.

Steel: Aogami Super with iron cladding. This is an all carbon blade. 

Rockwell Hardness: 65-66

Handle: 

Edge/Bevel Double (50/50) 

 

Use & Care

  • Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break with improper use.
  • Hand wash with warm water and towel dry. Never put the knife in a dishwasher, nor soak it in water. Ever!
  • Use a sharpening stone to maintain the sharpness of the blade. 
  • Do not use on hard melons or items that may torque the blade.
