Santoku

The Santoku (three virtues) is an all purpose knife which name is derived for its use on: meat, fish and vegetables. They tend to be medium sized knives that work with for a variety tasks. As the blades are smaller than gyutos (chef knives), they are more nimble, work better with limited counter space are often more suitable for smaller tasks.
