Ittetsu Kurouchi 210 Gyuto- Kurouchi Shirogami 1. This knife is upgraded with a Curly Ash, Cocobolo, and g10 handle for a very modest increase in price. This is a Kurouchi iron clad white No 1 Gyuto, hand forged by the blacksmith Tadayoshi Kajiwara-San. Grind is from Abe-San, formeely the lead sharpener for Yoshimi Kato.

The heat treatment is excellent coming in at 63-64 HRC. White Steel No 1 is easily sharpened and takes on a screaming edge.

As this is an all reactive knife, care must be taken to avoid rust. Please clean immediately after use and wipe down with a cloth.

Use & Care

  • Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break.
  • Hand wash with warm water and towel dry. Never put the knife in a dishwasher !!!! Ever!
  • Use a sharpening stone to maintain the sharpness of the blade.
  • Do not use on hard melons or items that may torque the blade.
