Shoichi Hashimoto is the greatest damascus artist in Japan, located in Hiroshima. His skill as a blacksmith is amazing. This knife is sharpened by the talented Naohito Myojin. 

The core of the Yuzan series is comprised of shirogami #2 and aogami #2 high carbon steels in a twist pattern damascus. The cladding is made from SK3, Soft Iron, and a multiple combination of other steels twisted. The beautifully etched steel displays infinite amounts of detail and character, the layers can be ever so slightly felt to the touch.

 


Use & Care

  • Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break with improper use.
  • Hand wash with warm water and towel dry. Never put the knife in a dishwasher, nor soak it in water. Ever!
  • Use a sharpening stone to maintain the sharpness of the blade. 
  • Do not use on hard melons or items that may torque the blade
